Join Kristina Tucker from The Republic of Tea for a guided tour of tea tasting. Learn how premium teas and herbs are evaluated for quality. This session will include the steps from observing the dry leaves to the technique of cupping. Participation in this interactive session will explore a range of flavors. Bring your questions and your passion for tea.

In Search of the Ultimate Matcha

Everyone knows coffee tastes the best when it’s freshly ground, so why not matcha? Join Eijiro (“Ey-jee-roh”), founder and former CEO of Stonemill Matcha, and now the founder and CEO of Cuzen Matcha, as he shares the history and benefits of drinking freshly ground matcha. He’ll touch on his 15+ year career in the tea business in Japan and the U.S., and what eventually led him to invent a matcha machine which produces freshly ground matcha out of organic shade-grown leaves.

Formosa Oolongs: The Champagne of Teas Originating in Taiwan

Learn about the history, regions, classification, and processing methods behind oolongs from Taiwan. Recognized since the late 17th century as some of the finest teas in the world, oolong tea is the main tea produced in Taiwan and accounts for about 20% of global oolong production. The country's subtropical climates, high elevation, precise machinery and artisanal techniques have provided the grounds for “perfecting" the craft of oolong tea. Beyond its quality and diversity in taste, people in Taiwan consider it suitable for all-day consumption due to its ability to balance heat and cold in the body. After this presentation you will further understand and appreciate the robust tea culture of Taiwan, and the artistic craftsmanship behind the cherished oolongs teas from the island.
